RICE SIDE OPTIONS

Rice Sides - Basic White Rice

Basic White Rice

Ingredient List

1 Tbsp  Butter

2 cups  Long Grain White Rice
1 tsp  Chicken Seasoning

4 cups  Water (cold or hot)

Steps to Prepare

  1. ​Heat butter in sauce pan until melted and bubbly

  2. Add rice and stir to coat with butter and heat to absorb some of the butter

  3. Add seasoning and stir in with rice to "bloom" seasonings for 10-20 seconds

  4. Add water (see Chef Note), turn heat to high and bring up to a low simmer

  5. Cover with lid, turn heat to very low and set timer for 15-minutes

  6. When timer goes off, tilt pan and if you see water when you tilt pan, continue cooking for 5-minutes

  7. When you see holes in the top and no water when you tilt the pan, turn heat off and allow to sit for 5-minutes with lid on

  8. After 5-minutes, remove lid, "fluff" lightly with fork. and it is ready to eat

NOTE:

  • If you are saving this rice for other meals, pour it into a large bowl or on a baking pan so it is spread out and let it cool off at room temperature for 20-30 minutes then put in frig UNCOVERED until it is cold.  Once it is cold you can put it into a smaller container or baggie to store

CHEF NOTES

  • To speed it up, heat the water in microwave before adding,  This can cut 5-minutes off the cooking time

  • Never put hot food in a baggie or container with a closed lid.  Always cool off first to slow bacteria growth

Rice Sides - Cilantro Lime Rice

Cilantro Lime Rice

Ingredient List

2 cups  Cooked White Rice

2 cups  Cooked Brown Rice

2 Tbsp  Fresh Cilantro, chopped

1 each  Fresh Lime

Steps to Prepare

  1. ​Reheat the cooked rice in the microwave until hot

  2. Stir in the squeezed lime juice and chopped cilantro

  3. Ready to eat!

NOTE:

  • LOTS of easy variations on this so be creative

CHEF NOTES

  • Best to use all brown rice, but at least try 50% to make it healthier
