Turkey Tacos w/ Corn & Black Bean Salad

Ingredient List

2 each  Tortillas, 6 inch

2 Tbsp  Mixed Cheese

1/2 each  Turkey Burger, cooked

AMAYW   Salad Greens

1 Tbsp  Italian Dressing

AMAYW   Corn & Bean Salad

AMAYW   Fresh Tomatoes

    AMAYW = As Much As You Want!

CHEF NOTES

To Assemble Tacos

  1. Plan to do 2 tacos per person.  You will use 1/2 burger for the 2 tacos.

  2. ​Cut or crumble 1/2 cooked burger into small pieces.  Place in microwave         for 15-30 seconds to get hot.​

  3. Heat a nonstick pan to medium on the stove with nothing in it.  Place tortilla in pan for 5-10 seconds to warm and flip over.  Add 1-Tablespoon cheese on each tortilla and heat 5-10 more seconds.  Place on plate to fill.

  4. ​Add warmed turkey on top of cheese.  Then add whatever vegetable toppings, salsa, or hot sauce you would like to use.

NOTE:

  • This recipe is setup for 1 Adult portions.  Plan on 1 Taco for children

  • You can add other flavor options like Pico de Gallo, Salsa, Hot Sauce, chopped Cilantro and Jalapenos if you wish

  • Don't add more cheese so it stays healthier for you

  • Try to get soft corn tortillas if able (as most are made for frying and are very dry and crack easily)

  • You can use flour tortillas, but the soft corn ones are best

  • Tortillas soften up when heated, but microwaving them dries them out​

Pasta with Veggie & Meat Sauce

Ingredient List

1 batch   Veggie & Meat Sauce*

1 pound  Pasta* (your choice of shape)

1 Tbsp  Salt (for pasta water)

4 Tbsp  Parmesan Cheese (1 Tbsp per person)

AMAYW*   Salad Greens (3-4 cups per person)

AMAYW*   Fresh Tomatoes

8 Tbsp  Italian Dressing* (2 Tbsp per person)

For Sauce  (See Recipe & Watch Video on making 3 Tomato Sauces)

  1.  Heat this sauce up to a simmer.

  2.  Everything is cooked already in this sauce so you just need to heat it up.

​For Pasta   (See Recipe & Watch Video on Cooking Pasta)

  1. Put 4 quarts of water in a pot on high heat.  Add salt and bring up to a full boil.

  2. ​Add pasta and stir to separate. Return to heavy simmer.

  3. Stir only 2-3 times while cooking to ensure it isn't clumping together.  Check box for how long to cook it (see video on this)

  4. Drain pasta when done and divide into bowls.  Evenly spoon the warm meat sauce over the hot pasta.

  5. If you wish, add about 1 Tablespoon of parmesan cheese on top.

NOTE:

  • This recipe is setup for 4 Adult portions.  If using pasta you cooked ahead, plan on 2-cups of cooked pasta for adults and 1 to 1-2 cups cooked pasta for kids.  Watch video to see how to cook pasta ahead and reheat it in the microwave.

  • Don't add more cheese or dressing over what you see above so it stays      healthy for you

CHEF NOTES

  • Everything in the Veggie & Meat sauce is cooked so it just needs to be heated up

  • You can use pasta that has been prepped ahead and microwaved.  Add 1/2 Tbsp butter per person to pasta before heating and then toss when hot.

Turkey Enchilada Casserole
w/ Tossed Salad Greens

Ingredient List

2 each  Turkey Burgers, cooked

8 each  6" Corn Tortillas, cut or torn

1 can 10.5oz  Cream of Mushroom Soup

1 can 19oz  Enchilada Sauce

2 cups  Vegetables, fresh or frozen (thawed)

3/4 cup  Mixed Cheese

1/4 cup  Mixed Cheese

  1. When ready to put this together, preheat oven to 375F.

  2. In large mixing bowl, add everything EXCEPT the 1/4 cup mixed cheese

  3. Mix everything up well in bowl and then pour into a oven-safe casserole dish

  4. Spread out evenly and sprinkle the last 1/4 cup of cheese over the top

  5. Bake until casserole is hot and bubbling

  6. Remove and let rest for 15-20 minutes and then ready to eat!

CHEF NOTES

  • Everything is cooked so just heating in oven

  • do large pieces of the tortillas when tearing or cutting

  • If using frozen vegetables, thaw ahead or just heat some in microwave to thaw

  • I list can ozs for the ones I used, your may be a little different which is fine

NOTE:

  • This recipe is setup for 4 Adult portions.  Plan on about half the amounts for children

  • This is a GREAT recipe to do ahead and freeze

  • You can also portion this into smaller amounts after you make this recipe if this is too large for your family

  • For example: You can make this recipe but just put half in a pan to cook now for a meal and put the other half in a pan and freeze for a later meal.
