Salad Greens

Mixed Salad Greens (basic mix)

Ingredient List

1 head   Iceberg Lettuce

2 bunches   Romaine Lettuce

* You just are looking to have equal amounts

Steps to Prepare

  1.  Take Iceberg and Romaine and remove any mushy or very wilted leaves.  If some of the leaves have bad spots or orange spots or streaks (called rust spots) you can remove these after you cut it up, but the rust spots are fine to eat (they just don't look good).

  2.  Cut or tear by hand the iceberg into bite-size pieces (like 1-2 inch pieces).

  3.  Add to bowl or storage container to mix with Romaine

  4.  Take Romaine bunch and cut in half lengthwise. Turn each half so cut side down and cut down the middle again lengthwise.

  5.  Now cut across bunches starting at the leafy top, so you get 1-2 inch pieces.  

  6.  Stop just as you get to the core at the base so you don't have any core pieces.

  7.  Mix with Romaine and hold refrigerated in storage container or ziplock bag.

CHEF NOTES

  • Remember, cut up the greens then just throw away the bad parts not the whole leaf

  • The rust parts are still fine to eat if you want

  • This is a basic mix, you can always add spinach, kale, or other fresh greens to this mix

Corn & Beans Salad

Ingredient List

1 each (med)  Yellow Onion, peeled (optional)  

2 cans  Black Beans, canned, drained   
3 cups  Corn, frozen, rinsed 

1/4  cup Cilantro, fresh, rinsed, shaken dry  

2 each (med) Tomatoes, fresh (optional)  

1 each  Lime Juice (or 1-tbsp.) 

1/2 tsp. Garlic Powder 

1 tsp.  Salt 

1/4 tsp. Cayenne Pepper

Steps to Prepare

  1.  Peel and dice up the onion, place into mixing bowl (if using onions)

  2.  Drain and rinse the beans. Rinse beans well. Place these in bowl

  3. Rinse frozen corn to start to thaw some. Drain and add

  4. Chop cilantro and dice tomatoes (see “How To” videos if needed) and add to bowl

  5. Add lime juice, garlic powder, salt and cayenne. Mix together

  6. Place bean salad into a suitable container and hold in refrigerator

CHEF NOTES

  •  You can add or reduce cayenne depending on how hot you like it. You may also substitute red pepper flakes or minced jalapeno if you don’t have cayenne. 

Pico de Gallo

Pico de Gallo (quick method)

Chopping a Tomato on a Cutting Board_ Finely chopping or dicing a fresh tomato on a wooden

Ingredient List

2 cups   Tomatoes, fresh, diced

1/2 cup   Onions, fresh, diced

1/2 cup   Cilantro, fresh, chopped

1/2 teaspoon   Salt

2 shakes   Granulated or Powdered Garlic

1 each   Lime, fresh, squeezed

2 shakes   Hot Sauce, your choice

Steps to Prepare

  1. Wash and diced tomatoesToss everything together in a bowl. 

  2. Place in zip lock baggie or storage container

  3. Store in the refrigerator

CHEF NOTES

  • You can use 1-2 cloves of smashed fresh garlic to replace granulated garlic

  • You can use fresh minced jalapenos, or cayenne pepper in place of the hot sauce
