Ground Turkey should have fresh look and light pink color (no grey)

Fresh Crimini mushrooms are best, White Button mushrooms will work. Make sure dry and not slimy

Look on bottom of plastic spinach container to make sure no black or slimy leaves

You can buy Ranch Seasoning in small packages or Sam's/Costco may have larger tubs of it
Ingredient List

2 lbs Ground Turkey
3 cups Mushrooms, fresh
3 cups Spinach, fresh
2 tablespoons Ranch Seasoning
CHEF NOTES

Always wear gloves when handling the raw turkey.

If cooking in oven, preheat to 375F.

Crimini mushrooms are tan to brown and look like regular white mushrooms. Sometimes spelled cremini or called baby portobello mushrooms
-
Clean all equipment and surfaces then spray with sanitizer after making the turkey burgers.
-
If not going to cook burgers right away, put in refrigerator.
-
Try to cook within 1-hour of making burgers so mushrooms don't turn dark.
-
Cook to internal thermometer reads 155 - 165F in center of burgers. If you don't have a thermometer, look for juices that come to top and make sure juice is CLEAR . . . no pink.

Put leftover cooked burgers in refrigerator UNCOVERED to cool over-night. Then wrap or put in plastic bag and hold refrigerated OR freeze.
Steps to Prepare
Making Turkey Burgers​​

Open mushrooms and rinse quickly under cold water. Dry slightly with paper towels. Rough chop into 1/8 inch pieces with knife or in food processor with "S" blade. Place into large mixing bowl.

​You want to measure spinach by pressing leaves down slightly in 1-quart measuring container. Rough chop this into 1/4 inch pieces with knife or in food processor with "S" blade. Place in bowl with mushrooms.

​Sprinkle seasoning over mushrooms and spinach. Toss and mix until evenly coated with seasoning.

​Add ground turkey and mix together by hand until evenly fairly mixed (try not to over-mix).

​Portion into 8 even sized balls. Then form the balls into "pucks". Try to keep them even thickness from center to edges. Should be about 4 inches across (diameter). Watch video for demonstration on this.

Cooking Turkey Burgers

If using the oven make sure it is preheated to 375F. Spray a wire rack with food release (like PAM) and place on a cookie type pan. Place burgers on wire rack and place pan into the oven.

​If grilling burgers, get grill hot and clean grates with grill brush. Place burgers on grill with heat on high or medium high.

​Take off gloves when done handling raw burgers and throw them away. Make sure you wash your hands properly and clean & sanitizer your work area and anything you may have touched (like utensils, sink handles, oven knobs, etc.). Remember, raw turkey can be heavy with bacteria.

​Cook turkey on both sides until clear juices rise up on top. Best to use a food thermometer and cook to between 155F. to 165F. Place on pan and allow to rest for 5-10 minutes.

​Leftover burgers should be put in frig uncovered over-night. The wrap/bag and hold cold or freeze.

TURKEY ENCHILADA CASSEROLE

You will find this in the Mexican section at grocery store

The monterey jack / cheddar or if the have a Mexican style mixed cheese
-
You will cut or tear these up into 1-inch pieces

Whatever mix you feel you would like BUT with some green vegetables in it

The leftover cooked, refrigerated burgers or thaw leftover frozen ones

Ingredient List
1 can Cream of Mushroom Soup
1 cup Enchilada Sauce, canned
3/4 cup Mixed Cheese
8 each Corn Tortillas
2 cups Frozen Mixed Vegetables
2 each Turkey Burgers, cooked
1/4 cup Mixed Cheese

Vegetables don't need to be fully thawed, just enough so you can cut them up and drain them.
-
If using frozen leftover turkey burgers, put in microwave until thawed enough to cut up.
-
Everything is cooked in this so you just have to get everything hot.
-
This is a good dish to make ahead and freeze for later.
Steps to Prepare
To Assemble Casserole

Place frozen vegetables in microwave for 1-minute to thaw a little (partial frozen OK). If big pieces cut them up into more bite-size. Drain or use paper towels to get excess water out. Preheat oven to 375F.​

Place the soup & enchilada sauce in bowl and blend together.
-
Then add drained vegetables, 3/4 cup mixed cheese, and cut up tortillas and mix together.​
-
Now cut up the cooked turkey burgers into 3/4-inch chunks and mix in. Pour this mix into a 2-quart casserole pan. Top with remaining 1/4 cup of cheese and place in preheated oven.​

Cook about 15-20 minutes. It should be bubbling and hot throughout. Remove and allow to rest for 10-15 minutes. This will help it to "set up" some.​

Divide into 4 portions to serve.

Steps to Prepare
To Assemble Tacos

Plan to do 2 tacos per person. You will use 1/2 burger for the 2 tacos.

​Cut or crumble 1/2 cooked burger into small pieces. Place in microwave for 15-30 seconds to get hot.​

Heat a nonstick pan to medium on the stove with nothing in it. Place tortilla in pan for 5-10 seconds to warm and flip over. Add 1-Tablespoon cheese on each tortilla and heat 5-10 more seconds. Place on plate to fill.

​Add warmed turkey on top of cheese. Then add whatever vegetable toppings, salsa, or hot sauce you would like to use.

Ingredient List
24 ounces Spaghetti Sauce, jar
1/4 teaspoon Red Pepper Flakes
1-1/12 teaspoon Italian Seasoning
1/2 Garlic Powder
2 each Turkey Burgers, cooked
1 cup Frozen Mixed Vegetables
1 pound Spaghetti
2 tablespoons Salt
4 tablespoons Parmesan Cheese (optional)

If using frozen leftover turkey burgers, put in microwave until thawed enough to cut up.

If you are not going to use all of the cooked pasta, place back into pot after you drain it and cover with cold water. Stir to make sure it is completely cool. Then drain and toss with a tablespoon of oil. Put this in bowl or baggie and refrigerate. Just microwave to heat when you are ready to use.
Steps to Prepare
For Sauce

Place frozen vegetables in microwave for 1-minute to thaw a little (partial frozen OK). If big pieces cut them up into more bite-size.

​​Place spaghetti sauce in sauce pan on medium heat. Add seasonings and cut up vegetables.

​​Now cut up or crumble the cooked turkey burgers into medium chunks and mix into sauce. Heat sauce to a light bubble and turn off while you cook spaghetti.

​For Pasta

​​Put 3-4 quarts of water in a suitable pot on high heat. Add salt and bring up to a full boil.
-
​​Stir 2-3 times while cooking to ensure it isn't clumping together. Check box for how long to cook it.

​Drain pasta when done and divide into 4 bowls. Evenly spoon the warm meat sauce over the hot pasta.

​If you wish, shake about 1 Tablespoon of parmesan cheese on top.
