Cooking Pasta

Ingredient List

1 Gal  Water

1 Tbsp   Salt

1 Lb   Choice of Pasta*

  1.  Add water and salt into a pot and bring up to a boil.

  2.  Look on the package to see the recommended time to cook the pasta (see Chef Notes below on this)

  3.  Once it is at a rolling boil add pasta and stir to make sure it isn't sticking together.  Set timer.  Do not cover!

  4. Stir 2-3 more times just to keep it separated.

  5.  When pasta is done drain into a colander. 

    1. If using now, return to the hot pot, add some of the sauce you are serving it with and toss.  Serve additional sauce on top after plating.

    2. If planning to cool and use later, place drained pasta back in pot and immediately start adding cold water (NOT ice though).  Stir by hand until water is cool to the touch.  Drain again, toss with 1-2 Tbsp oil and store in baggie in refrigerator to heat in microwave later.

CHEF NOTES

  • Normally the package will give a time range like 10-12 minutes.  It is important to determine if you are going to use the pasta NOW or are you cooking it AHEAD.  If going to use it now cook the pasta to the longer recommended number (12-min).  If going to cool it and use it for later, use the shorter time (10-min).

  • Plan to use 2-cups of cooked pasta for an adult serving and 1 to 1-1/2 cups for children
